The Yukro co-op is made up of over 1,000 farmer members who grow this coffee at altitudes ranging from 1900 to 2000 masl. Unlike almost all other producers in the area, these lots are built based on cherry delivered on a given day. The production team are meticulous about their quality control, even storing their parchment coffee in a sealed bag, a first for Ethiopia that required government approval. This honey processed lot has a distinct stone fruit acidity that reminds us of fresh nectarine. It also has a sparkling citrus characteristic, and the processing method is responsible for the sticky sweet texture that reminds us of maple syrup. This coffee is a really interesting and delicious example of a more atypical processing method from the Jimma region.
